Tortilla Roll-ups

Yesterday as soon as I reached home from work, I walked straight into the Kitchen and raided the Refrigerator hoping to find something to curb my hunger. But, Nope! Nothing, Zilch! I had a couple of Tortillas left over and just a capscium. Earlier, I searched the Web to stumble upon something interesting to make with the Tortillas I had, but either found stuffings with Beef/other kinds of meat or boring versions of vegetarian filling with loads of Cheese. Clueless on what I'd be cooking, I added anything that I laid my eyes on (thinking to myself - "Yeah! Sure, Why not?!") & ended up with a great tasting appetizer within 10 mins!


Ingredients:

Tortillas - 2
Capsicum - 1 - Finely Chopped
Onion - 1 Medium - Finely Chopped
Green Chillies - 2-3 finely chopped
Garlic Pods - 2 finely chopped
Red Chili flakes - about half a teaspoon
Dried Oregano Leaves - half a teaspoon
Salt
Lime juice - 1 tsp
Olive Oil - 1 tbsp
Light Mayonaise - 1 tbsp


Recipe:

* In a pan, add the olive oil and toss in the green chillies,red chili flakes, Oregano and Garlic. After 30 secs, add chopped Onion & Capscium and salt. Cover and Cook for about 5 mins on a medium flame.
* Once cooked, add lime juice and give a good stir. Switch off and keep aside.
* On a griddle, heat the Tortillas without adding any oil. Flip to heat on both sides.
* Spread the mayonaise on the Tortillas evenly, add the cooked veggies and spread. Roll them up as shown. Cut into a little over 1 inch pieces. Stick a tooth-pick and Serve with Ketchup!

I would leave it to your imagination as to what else can be stuffed into the Tortillas. I basically was running out of veggies, and had limited options. Also, you can try spreading Pizza Sauce instead of Mayonaise. Just make sure the roll doesn't get too big for a bite! :-P

Thats indeed a quick recipe.. Very innovative! Delicious! How did u manage to take photos when hungry? If it is for me, it would have vanished in seconds :D

Thanks Anu! The rolls you see in the pics are from the 2nd Round ;-) , the first one as you mentioned vanished within secs.. :-D

A New Food Blog, but why?!

I chose to name this Blog Annapurna, as it is a Sanskrit name which literally means "full of food"- Couldn't find something more apt than this!

I've always been interested in food/cooking ever since a kid, but never helped my mom in the kitchen! Instead I kept bugging her with my infinite questions and that's how I learnt to cook! But, the real passion began here in the US where I started to crave for home-cooked food and the Street food @ Hyd. The Indian Restaurants didn't help either with their bland taste and that's when my experiments in the kitchen began to take shape! Here's an attempt to bring together couple of my biggest passions - Cooking & Photography! Hope you like what you read here & do drop in your valuable comments!

The recipes I would post here are all Vegetarian, So No Meat - No Eggs!
