How has the weather been in your part of the world? The past week here has been raining or gray at the least .. Not that I have a problem with it or anything, it just makes the mornings tougher and there are more yawns at work (Yawn Again!). I took an off yesterday, just to sleep through all day! :D
Personally I love when it rains. I enjoy the smell of earth after the first few drops of rain the most, and I love the sight of little droplets of water on leaves.. and more importantly I love eating Corn when it rains! I remember running around as a kid drenched from head to toe, carefully selecting fresh corn cob and passing it back to the vendor who toasts it over hot coal and rubs it over with lemon & salt - hmm, I miss that so much :( I tried to recreate that by roasting corn over gas stove, it was not great but not bad either!
To make things even better, last weekend I cooked Kadai Paneer. Nothing better than having a hot curry with a mild spiced rice for a good rainy day's meal! Here goes my version:
Ingredients: (Serves 3-4)
Paneer - 15 to 20 half inch Cubed pieces
Green Pepper - 1 medium - cubed
Yellow and Orange Peppers - 1 medium each - cubed
Red Onion - 1 medium - Cubed
Tomatoes - 2 - pureed
Oil to fry
Chopped Corriander for Garnish
Spices : A tsp (or more) of Red Chilli powder, A tsp of Garam Masala, A tsp of Corriander Powder and Salt to taste
Temper: A tsp of Jeera (Cumin Seeds) and 4 Red Chillies
Recipe:
* Heat a tbsp of oil and Shallow fry Paneer cubes until golden brown. Drain onto a paper towel
* In the leftover oil, add onions and peppers and fry until they are cooked on all sides but not mushed up. Remove and drain onto a paper towel.
* In the same pan, if there's any oil - Add 1 tsp Cumin seeds, and once they splutter add red chillies.
* Add pureed tomatoes and spices. When the oil seperates, add peppers, onions and paneer. Give a good mix and check seasoning.
* Transfer to a serving bowl or a cute little kadai if you have one and Garnish with Chopped Corriander. Serve hot with any Rice or Roti. The curry looked so colorful at the end of it and the photo doesn't do all the justice that it deserves.
